The Ultimate Cookie

Every good blog needs a good recipe, right?

I don’t believe in gatekeeping - everyone deserves to have simple, tasty things. And I'm not gonna share any deep life stories to hold you hostage before revealing this recipe. All I will say is this is one of my oldest + most used and loved recipes that is a go-to for any occasion and one I make regularly as a healthy and tasty snack to have on hand for a busy week.

I call it the ULTIMATE COOKIE as it is a peanut butter/chocolate chip/oatmeal cookie that is vegan and gluten-free, made with all organic ingredients, is nutritious, AND actually delicious! It does it all. I always get asked for the recipe, so I thought if I give it somewhere to live, I can share the love more easily.

A yummy treat that is basically breakfast in a cookie.

I can’t remember where I got this recipe, but it has evolved over lots of time. I’d say this makes about 12 big-ish cookies.
If you like a crunchy/crispy cookie, skip the apple sauce.
If you like a chewy cookie, maybe add a little more.

I also often add walnuts, raisins, or other spices, and change up the nut butter + I have recently swapped the avo oil for coconut - or just eliminated it for a little extra nut butter (cause it’s oily enough, ya?), and it’s been good. Even better.
There are no rules. Add or subtract for your desires or allergies.

The ultimate cookie is the reminder that you can have it all.
You don’t have to choose between chocolate chip and peanut butter. Between tasty and nutritious. Between convenient and healthy.
It is a cookie. Not a replacement for a meal, but it can definitely add some sustenance and joy to your days in a simple way.

You deserve the sweet treat! But, even better if the sweet treat is real food with nutrients.

My First Blog - Doing the thing.

Hi!

This is my first blog!
New year, new opportunity to do the thing you have been talking about doing for many years, right?

You know, when you have an idea, talk about it a lot, feel excited and envision it in all its details… and then start to overthink it and decide “nahh, that’s silly, I’m not gonna do that”, or say “I’ll do it another day.”
- That has been the blog idea for me.

I have always loved using social media as a place of expression for a long time. Like a virtual journal for my thoughts, ideas, and to even process events with words and pictures. Most of the time, I pour my thoughts/heart out onto my notepad and then go to post it, and it’s way too long. Doesn’t fit the required mould. (very on-brand for me) So, I have to refine, cut out and shrink it down to fit the square. If you know me, you know I like to share in depth. Short story, long kinda gal. The details matter, right?! So it has always left me feeling incomplete or like the thought didn’t come through the way I intended. + This website is mine. Something I pay for and have built to showcase my offerings, ideas, and personality. Why not put all the heart-filled content I create on here instead of an app owned by… someone else. (-Mostly my genious husbands idea, not mine)

So, here we go. It’s another stuck inside snow day with a couple of feet of fluffy snow outside (oh, darn). After a few days of lounging with little productivity, enjoying the cozy rest, today seems to have brought a burst of energy and inspiration.

I’m still not sure why/if anyone would come here to read my words, but I am often told by friends that they have enjoyed what I have posted on the socials.
Also, just like my insta, this is mostly a way for me to get my thoughts out of my mind and organized in front of me, to hopefully find some clarity and just express it all with some creativity.

So, If you are into short story, long type expressions of my thoughts and experiences - usually having to do with the meaning of life, how beautiful and tragic it all is and things that help me to understand and even find joy amongst it (ie, plants, yoga, crafts, tasty treats, magical moments etc.) Stick around! It will probably be a little messy, including lots of imperfections, but nothing starts out perfected; it’s the experience that makes it grow into new versions of itself. Just like us!

+ Maybe a moment of inspiration for you to start the thing. That thing you have been thinking about, imagining doing, whatever it is. Even in its imperfect version, with little to no experience. (trust me, I know it’s hard!) But, where else do you start?
And you know what they say about ideas… better out than in, right!?
